Elderflower cordial
or as it's called here in Denmark hyldedrik
Ingredients
- 80 elderflower heads
- 4 lemons
- 30 gram citric acid
- 4 kg cane sugar
- 4 liters of water
Method
- add flowers sugar and citric acid to a large pot/vessel.
- cut lemons into slices and add to pot.
- boil water and add to pot.
- stir until sugar is dissolved.
- let stand until cooled.
- put in fridge for four days, stir once daily.
- strain and pour into bottles.
notes
This is more a syrup than a cordial in the sence that there is a one to one ratio of sugar to water.
I think this is how my mother made it.
